It won't be called a "kill switch" at the store. You use an ordinary general-purpose toggle switch like would be used for fog lights, etc.
The fuel pump circuit is 15 amps, so if you're going to put the switch on the fuel pump line it should be rated for 15 amps or more.

That one you would just wire in the starter circuit. Note that a thief could still (after busting the ignition cylinder) roll-start the car or hotwire the starter directly under the hood. If you cut the fuel pump or the ignition circuit it will crank but not start, which makes a lot of noise and frustration. You can of course do more than one technique at once.
