Default Pulled code for CEL

about 4 weeks ago, i was tryin to teach my wife how to drive a stick and she killed it on a hill like 10 times in a row, and the cel came. and ever since then my cel has been coming on once or twice a week and i just keep resetting it. ... so finally i went and had the code pulled....this is what i got

P0128
Coolent Temp
Below Thermostat
Regulating Temp

What would cause this, only mod i have is CAI, would this have anything to do with it (if not, it would be under warranty...hehe) ... what can i do to keep this dang thing off

ok, got an idea,

i have notice that when it is cooler outside, it take my car 15-20 mins of highway driving to finally heat up good, this can't be right...so maybe my thermostat is staying open and not allowing the engine to heat properly...

just and idea, let me know if i could be on a right track?
